STEP BY STEP (makes 32 pieces)
1. In a pot, combine the rice vinegar, sugar and salt. Heat the mixture until the sugar dissolves. (Do not let it boil.) Remove the mixture from the pot and let it cool to room temperature. If you wish to skip this step, use 6 tbsp Sushi Vinegar. In the end, the result is the same. Do not use white vinegar. Either use rice or sushi vinegar.
2. Wash the rice in a bowl of water and stir it with your hand; drain the water and repeat this step until the water is clear. This gets rid of the starches. Next, place the rice in a pan of water and soak it for 30 minutes. Finally, drain the rice in a colander for 30 minutes in your refrigerator. Use a bowl to catch the water that drains down.
