Making California Rolls

What You Need

  • 3 Cups Sushi Rice
  • 4 Nori Sheets
  • 320 grams Imitation Crab Meat
  • 1 Avocado
  • Lemon Juice
  • 1/2 English Cucumber
  • 6 tbsp Rice Vinegar
  • 2 tbsp White Sugar
  • 2 tsp Salt
  • Bamboo Sushi Roll Mat
  • Clean Cutting Board & Knife
  • Japanese Mayonnaise
  • Soy Sauce and Wasabi
  • Pickled Ginger

STEP BY STEP (makes 32 pieces)

1. In a pot, combine the rice vinegar, sugar and salt. Heat the mixture until the sugar dissolves. (Do not let it boil.) Remove the mixture from the pot and let it cool to room temperature. If you wish to skip this step, use 6 tbsp Sushi Vinegar. In the end, the result is the same. Do not use white vinegar. Either use rice or sushi vinegar.

2. Wash the rice in a bowl of water and stir it with your hand; drain the water and repeat this step until the water is clear. This gets rid of the starches. Next, place the rice in a pan of water and soak it for 30 minutes. Finally, drain the rice in a colander for 30 minutes in your refrigerator. Use a bowl to catch the water that drains down.

3. If you don't have a rice cooker, add the rice to a pot and add 3 1/2 cups of water. Bring the rice to a boil and reduce the heat to low; simmer with the top on for 15 minutes. Check the rice after 6-8 minutes & stop cooking it if there is no more water left. Next turn the heat off and let the rice sit for an additional 15 minutes (covered).

4. Transfer the rice to a large sheet of aluminum foil or to a glass casserole dish (as pictured). Loosen the rice grains gently with a rubber spatula or wooden spoon by cutting and folding (do not stir, as this will crush the rice). Either use the rice soon after preparing it or cover it with a damp cloth to keep it moist. Do not refrigerate the cooked rice.

5. Pour the vinegar mixture evenly over the rice and then let the rice cool down completely before using it. While you are waiting for it to cool down, you can proceed to step 6 and prepare all the ingredients that you are using. One of them is Nori Seaweed. Place the shiny side down when you get to step 7 (using the bamboo sushi roll).

6. Peel, de-seed and slice the cucumber lengthwise into 7 inch strips. Next, cut the avocado lengthwise, remove the pit and cut each half into 1 cm strips. To prevent the avocado from going brown, sprinkle it with some lemon juice. Last of all, cut the imitation crab lengthwise into slender strips; just cut the crab meat in half.
